Amla Murabba

Using amlas, you can prepare a delicious pickle, called Amla Murabba. It is an awesome accompaniment to any meal. Amla is a good source of iron, calcium, vitamin C, and dietary fibre. The amlas are flavoured with cardamom powder and saffron, which enhances the taste and aroma of this pickle.

    Ingredients to make Amla Murabba:

    15-20 amlas, 2.5 cups sugar, ¼ tsp cardamom powder, a few saffron strands

    Steps to make Amla Murabba:

    1. Wash the amlas well. Using a fork, make many pricks on the amlas.

    2. In a vessel, pour water. Add the amlas and boil for about 10 minutes. Drain the water and keep aside.

    3. In a kadai, pour 3 cups of water and add sugar.

    4. Cook on medium flame for about 10 minutes. Stir in occasionally.

    5. Now, add the boiled amlas to the sugar syrup and cook on low flame for about half an hour. The amlas should turn soft.

    6. Cover with lid and keep aside for about 2 days. During this time the amlas will get matured.

    7. Using a filter, drain the sweet liquid and keep the amlas aside.

    8. To the sweet liquid, add cardamom powder and saffron strands. Cook on high flame for about 10 minutes. Stir in between.

    9. Add the amlas to the sweet syrup and cook on medium flame for about 5 minutes. Before transferring amla murabba in a dry glass jar, allow it to cool completely.

    Serve the Alma Murabba with rotis or parathas. Enjoy!
