Beans Methi Rice

The veggies rice include beans that are the least expensive source of protein, especially when compared to fresh meat. Aside from protein, complex carbs and fiber, beans contain a powerhouse of nutrients including antioxidants, and vitamins and minerals, such as, copper, folate, iron, magnesium, manganese, phosphorous, potassium and zinc. It is a healthy blend of beans with rice, which is a good source of carbohydrate. In addition to the rice and beans, the eclectic mix of herbs and spices add to the many health benefits of veggies rice. It aids good digestion and is an easy to prepare dish.

    Ingredients to make Beans Methi Rice:

    Basmati Rice-1 cup, water-2 cup, cumin seeds-½ tsb, oil-2 tsb, mustard seeds-½ tsb, beans-½ cup and Methi leaves-½ cup

    Steps to make Beans Methi Rice:

    1. Wash basmati rice thrice and keep aside.

    2. Heat oil in a pressure cooker and add cumin and mustard seeds. Let it splutter.

    3. Add chopped beans and fry for 10 minutes.

    4. Add basmati rice. Stir well.

    5. Add water and pressure cook upto 2 whistles at medium flame.

    6. Turn off the flame and wait till pressure is released.

    Serve hot with dal.
