Bhindi Curds

Bhindi Curds is a great way to enjoy lady's fingers in a tangy creamy sauce. It is simply delicious, and easy to make and is loaded with proteins and fiber.

    Ingredients to make Bhindi Curds:

    250gms bhindi, 1 chopped onion, 2 tomatoes- pureed, 1⁄2 tbsp ginger-garlic paste, 1⁄2 cup curd, 1 tbsp besan, 1 tsp cumin seeds, 1 tsp coriander powder, oil, ghee, salt, water

    Steps to make Bhindi Curds:

    1. Rinse, dry and chop the bhindi.

    2. Heat 2 tbsp oil in a pan and saute the chopped bhindi on medium flame. Saute until they are cooked.

    3. Remove the sauted bhindi and keep aside.

    4. Heat up the same pan and add 1 tbsp ghee. Add cumin seeds and allow it to crackle.

    5. Add the chopped onion and saute till the onions becomes translucent.

    6. Add the ginger-garlic paste and saute well. Now add pureed tomato and saute till the oil starts leaving the sides of mixture.

    7. Add besan, coriander powder and mix well. Saute on low flame till the aroma of raw besan goes away.

    8. Add the whisked curd and water (if required). Stir well.

    9. Add the sauted bhindi and salt as per taste.

    10. Bring it to boil on low heat.

    Bhindi Curds is ready to serve. This goes well with jeera rice, or roti-paratha.
