Chaula Kheeri is made of roasted rice cooked in full fat milk and sweetened with sugar, flavoured with saffron. This kheeri is distinctly made with roasted rice to enhnace the taste and aroma of normal kheeri. It is rich in calcium and carbohydrates.

2 litre milk, 1/3 cup soaked rice, ½ cup sugar, ½ cup cream, a pinch of saffron, 3-4 tbsp warm milk, 1 tsp cardamom powder, 2 tbsp rose water, 3 tbsp ghee, handful of chopped cashews, 1 bay leaf
1. Combine the warm milk and saffron in a bowl, mix well and keep aside.
2. Heat the ghee in a cooker or deep pan, add the bay leaf and rice, mix well and roast on a medium flame for 4-5 minutes, while stirring occasionally.
3. Add 2 tbsp sugar and allow it to caramelize. When bubbles pop up, immediately add milk and bring it to boil.
4. Simmer the gas until the rice is soft and grains are starting to break up.
5. Add the sugar and stir until completely dissolved.
6. Add cashews, cardamom powder, saffron milk, cream, and simmer for another 5 minutes.
Chaula Kheeri is ready to serve.
