Di-nutty Aloo Curry

Do you want to incorporate dry fruits in different style to your diet? Here is one such recipe strengthened with peanuts which has mono and polyunsaturated fatty acids, cashews packed with soluable dietary fiber, vitamins, minerals and numerous health-promoting phytochemicals. This curry easy to prepare and is a good side dish for any main course.

    Ingredients to make Di-nutty Aloo Curry:

    200 gms potatoes peeled and diced into 1 inch cubes, then boiled in salt water until tender, 2 tbsp grated coconut, 3 tbsp Peanuts roughly chopped, 3 tbsp cashews roughly chopped, 2 tsp. raisins, 1 tsp sugar, 1 tbsp lime juice, 2 tbsp ghee, ½ tsp turmeric powder, 2 tsp whole cumin seeds, 7 curry leaves, 1 tsp finely minced ginger, 2 tbsp chopped coriander leaves, 1 tsp black pepper powder, a pinch of asafoetida, and salt to taste

    Steps to make Di-nutty Aloo Curry:

    1. Heat the ghee in a pan and add the cumin seeds, ginger, curry leaves, asafoetida, peanuts, and cashew nuts.

    2. Sauté for a few minutes until aromatic and the peanuts and cashews become golden.

    3. Add the boiled and diced potatoes, add turmeric and gently mix and cook on a low heat for 5 mins.

    4. Add the salt and black pepper powder, sugar and remove from the heat and add lime juice mix well and garnish with coriander leaves.

    Prepare this curry for lunch today and feel heaven while relishing it with poori or pulao.
