Gavarfali ki Sabzi

Cluster beans is a good source of dietary fibre. You can prepare a delicious semi gravy dish, Gavarfali ki Sabzi using cluster beans and curd. Baking soda is added in this recipe to retain the colour of the beans and to ensure it is cooked well.

    Flavour this sabzi with cumin, fennel seeds, and curry leaves along with dry spices and the resultant dish is a great accompaniment to phulkas.

    Ingredients to make Gavarfali ki Sabzi:

    2 cups cluster beans, a pinch of baking soda, 1 tbsp coriander powder, 1 cup curd, 2 tsp besan, 2 tsp chili powder, salt to taste, 1 tsp cumin seeds, 1 tsp mustard seeds, ¼ tsp asafoetida, 1 tsp fennel seeds, 4-5 curry leaves, 2 tbsp oil

    Steps to make Gavarfali ki Sabzi:

    1. In a vessel, pour 3 cups of water. Add the cluster beans and cook on medium flame till they turn tender. Drain out the water and keep them aside.

    2. In a mixing bowl, add curd, baking soda, coriander powder, chilli powder, besan and salt. Whisk and keep it aside.

    3. In a kadai, put oil. Once the oil is warm, put asafoetida mustard seeds, cumin and fennel seeds. Saute for 2 minutes.

    4. Add the curd besan mixture, curry leaves and little water. Give a good mix and cook on medium flame for about 3-4 minutes, stirring continuously.

    5. Add the tender cluster beans to the cooked curd besan mixture and stir for 2-3 minutes.

    Hot and delicious Gavarfali ki Sabzi is ready for your child to be relished with hot soft phulkas. Enjoy!
