Kaddu Ki Barfi

Pumpkin is a colourful and nutritious vegetable that has vital vitamin and minerals. Using this vegetable, you can prepare delicious Kaddu ki Barfi . You can flavour the pumpkin with sugar that has carbohydrates and green cardamoms, which has vital minerals like iron and manganese.

    Ingredients to make Kaddu Ki Barfi:

    2 cups grated pumpkin, 1/2 cup sugar, 1 tsp green cardamom powder, 1 tsp melon seeds, 4-5 raisins, 4-5 almonds, 2 tsp oil

    Steps to make Kaddu Ki Barfi:

    1. In a kadai, add 1 tsp oil. Add the grated pumpkin.

    2. On medium flame, saute the grated pumpkin for 8 to 10 minutes. Once the pumpkin is ¾ th cooked, blend the sugar and green cardamom. Add the blended sugar to the pumpkin and cook for another 5 minutes till the sugar gets incorporated well. Switch off the flame.

    3. On a greased tray, transfer the pumpkin mixture and spread it evenly. Top it with finely chopped raisins, almonds and melon seeds.

    4. Allow this mixture to rest till it comes to room temperature.

    5. Refrigerate for an hour. Cut criss cross or into small squares.

    Delicious, tasty Kaddu ki Barfi is ready.
