Malgapodi

Malgapodi, also known as gun powder or idli podi, which is normally enjoyed with south Indian dishes specially idli. It is a very spicy lip smacking powder, which is made from roasted dal and dry Kashmiri red chiles. Urad dal is rich in fibre, boosts energy, and strengthen the nervous system.

    Ingredients to make Malgapodi:

    1 cup urad dal, 2 tbsp chana dal, 12 whole dry Kashmiri red chiles, 10 -12 curry leaves, ½ tsp asafoetida, and salt to taste

    Steps to make Malgapodi:

    1. Dry roast the urad dal and chana dal separately for 2-3 minutes or till it turns light brown in colour. Keep them aside separately in a plate and allow them to cool. Make sure the lentils are well roasted, not burnt.

    2. Now dry roast the red chillies in the same pan for 30 seconds.

    3. Add the curry leaves to it and dry roast on a medium flame for 1 minute.

    4. Remove the red chillies and curry leaves in a plate. Allow this mixture to cool down for 15 to 20 minutes

    5. Combine all the ingredients now along with the asafoetida and salt and blend in a mixer to a slightly coarse powder.

    Store in an air-tight container and use as needed.
