Roughly chopped leaves of spinach or Palong Shaak fried with a tad bit of spices and some peanuts constitute the simple, healthy palong shak bhaja. This Palong Shaak recipe requires next to no ingredients and takes hardly 5 minutes to cook. It is rich in iron, fibre, and many vitamins and minerals!

Spinach, onion, garlic, green chili, mustard oil, nuts, poppy seeds, water
1. Clean and wash the spinach under running water. Drain water completely.
2. Once water is discarded completely, finely chop the spinach. And keep aside on paper towel.
3. Finely chop onion, garlic and green chili.
4. Heat a large skillet on high flame and add mustard oil. Once the oil is smoking hot add chopped garlic, onion and saute.
5. Add spinach and mix well with the rest. Cover with the lid and let it cook on medium flame.
6. When the shak is completely cooked add nuts and poppy seeds. Keep the flame high. Stir in between to avoid burning.
7. Once excess water is evaporated completely, turn off the flame.
Serve it with white steamed rice.
