Pyaaz ki Kachori

You can prepare delicious, steaming hot Pyaaz ki Kachoris using rice flour and besan. This carbohydrate protein rich evening snack is flavoured with onion, ginger-garlic, and spices, and tastes super awesome.

    Ingredients to make Pyaaz ki Kachori:

    2 cups maida, 2 cups onion, 2 green chillies, 1 tsp ginger, 2 tsp crushed coriander, ¼ tsp asafoetida, ¼ tsp turmeric powder, 2 tsp white sesame seeds, 2 tsp ajwain, 2 tsp fennel seeds, 2 tsp poppy seeds, 2-3 cardamom, 2 bay leaves, 1 tbsp butter, water to knead the dough, oil for frying

    Steps to make Pyaaz ki Kachori:

    1. Make a semi-soft dough using maida, ½ tbsp butter, salt and water. Cover with a muslin cloth and let it rest for 15-20 minutes.

    2. In a pan, add the remaining ghee. Add bay leaves, asafoetida, fennel seeds, crushed coriander, white sesame seeds, ajwain, cardamom poppy seeds and fennel seeds. Saute for 2 minutes.

    3. Add finely chopped onion, ginger, garlic, green chillies and saute for 2-3 minutes.

    4. Add the besan, salt and cook the mixture well for another 2-3 minutes.

    5. Transfer the besan mixture onto a plate and allow it to cool. Remove the bay leaves now.

    6. In a kadai, heat oil. Take a portion of the dough and shape into a ball.

    7. Roll it to the size of a poori and fill the onion besan stuffing. Seal it.

    8. Roll gently and deep fry the kachoris.

    Hot and yummy Pyaaz ki Kachori is ready to enjoy with tamarind chutney or tomato ketchup.
