Rotana

This is a popular sweet dish of Kumaoni region that is prepared from wheat flour and sugar. It can be enjoyed with evening tea as a snack or as a sweet dish with lunch or dinner.

    Ingredients to make Rotana:

    1 cup wheat flour, 3/4 cup sugar, 1 tbs ghee, ½ tsp cardamom powder, 2 tbsp milk, 2 tbsp desiccated coconut, powdered sugar to garnish, oil for frying

    Steps to make Rotana:

    1. Make sugar syrup by heating sugar in half cup of water for 5 minutes on low flame.

    2. Keep it aside and allow it to cool.

    3. Now take wheat flour in a bowl and add ghee in it. Rub it well.

    4. Now add 2 tbs of sugar syrup, cardamom powder, milk and coconut to this mixture.

    5. Knead a soft dough and if required add some more milk as well.

    6. Now make small lemon sized balls out of this dough.

    7. Take a shallow pan and add oil to it. On high flame when the oil is hot, fry these balls till they turn golden brown in color.

    8. Turn the heat to medium once the oil is too hot or else the balls will burn.

    9. Now take out the balls on an absorbent paper and dust them powdered sugar and coconut powder.

    10. Add some sugar syrup on top of it.

    Serve it as a dessert after lunch or dinner.
