Spinach Egg Muffins are a variation to the usual muffins. Loaded with the goodness of spinach, they also have the delicious flavour of onions and eggs. You will definitely enjoy the lip-smacking dish. Spinach is very good for health and has vital nutrients.

4 whole eggs, 1 onion, 1 cup spinach leaves (palak), salt to taste, 1 teaspoon black pepper powder, ½ tomato, 2 teaspoons garlic chopped, cooking oil as required
1. To make the Spinach Egg Muffins, preheat oven to 180°C. Grease the muffin tray with oil.
2. Heat a heavy bottomed pan adding oil, add chopped onion and saute until translucent. Add chopped tomato and cook until mushy.
3. Once the tomatoes are mushy, add washed spinach leaves and saute for a minute until it shrinks. Switch off the flame.
4. Take a mixing bowl, break eggs and add to the bowl. Now add salt, pepper powder, garlic and sautéed spinach mixture to the eggs in bowl. Whisk well until combined.
5. Ladle the egg mixture into greased muffin tray and bake for 15-20 minutes until the top becomes little firm.
6. Allow it to cool completely. Remove from the tray using spoon.
Serve Spinach Egg Muffins for breakfast or as snacks.
