Spinach Paneer Rice

Spinach Paneer Pulao is a green full proteinicious recipe for your kiddo. Spinach provides the much needed iron and folic acid for your growing baby while paneer is a good source of calcium. Adding mint and coriander in this recipe will give it a different taste, which your child will surely love. Mint is very rich in antioxidants and also gives relief from indigestion and pain.

    Ingredients to make Spinach Paneer Rice:

    1 cup rice, 1 medium sized onion, 2 cloves garlic, 1 medium sized potato, ¼ tsp turmeric powder, 1.25 cups water, salt to taste, 1 tsp lemon juice, 2 cups palak leaves, ⅛ cup mint leaves, ⅛ cup coriander leaves, 2 tbsp ghee/oil and ½ tsp cumin seeds

    Steps to make Spinach Paneer Rice:

    1. Soak the rice in water for 20-25 minutes. Chop, garlic, onion and potato into bite size pieces. Set aside.

    2. Clean and wash the spinach thoroughly. Grind the spinach, Coriander leaves, mint leaves to a smooth puree without adding any water. Keep it ready.

    3. Heat a pressure cooker with ghee and add cumin seeds. Once cumin seeds starts spluttering, add onions along with chopped garlic. Saute them nicely until golden brown.

    4. Once the onions becomes brown, add the chopped potato pieces, turmeric powder along with salt. Fry it for a minute.

    5. Now add the ground greens paste. Fry the paste until the raw smell leaves. Then add the soaked rice to the spinach gravy and mix well.

    6. Add water and bring it to a boil. Then close the lid of pressure cooker and cook everything in a medium flame for two whistles.

    7. Once the pressure releases, open the cooker and add lemon juice, mix well and top with ghee if required.

    Serve hot to your little one.
