Prepare this Sweet Onion Jelly to serve over creamcheese crackers. Sweet onions are yellowish in colour. They help in improving digestion and make bones strong.

    Ingredients to make Sweet Onion Jelly:

    3 cups chopped onions (sweet variety), 3/4 cup cider vinegar, 3 cups sugar, 1 tsp crushed red pepper flakes, 1 packet powdered fruit pectin

    Steps to make Sweet Onion Jelly:

    1. Take onion and vinegar and puree them together in a blender.

    2. Pour this puree into a saucepan. Add sugar and red pepper flakes and bring to boil over medium heat.

    3. Boil for approximately 5 minutes and then add pectin; stir well.

    4. Bring to hard boil and boil for another 1 minute.

    5. Pour this jelly into hot sterlised jar, close the lid and process it in boiling water bath for 10 minutes.

    Keep it aside to settle down.
