Tibetan Thukpa

This recipe is perfect and a comforting dish to be served during the winters. It is highly nutritious as it is loaded with veggies. Vegetables are important sources of many nutrients including potassium, dietary fiber, folate (folic acid), vitamin A, and vitamin C.

    Ingredients to make Tibetan Thukpa:

    150 gms veggie hakka noodles, ¼ cup chopped onion, 5-6 string beans,1 chopped carrot, ¼ cup chopped cabbage, 2 spring onions, 2 tbsp cilantro, 3 tbsp. sweet chili sauce, 2 garlic cloves, 2 tsp soy sauce, 4 cups vegetable broth, 1 cup water, 2 tsp oil, ½ tsp cumin powder, ¼ tsp garam masala and 1.5 tsp salt

    Steps to make Tibetan Thukpa:

    1. Boil noodles in water. Drain and rinse the noodles.

    2. Add oil in a pan. Once the oil is hot add the chopped onion and garlic.

    3. Once the onion is translucent add the other chopped veggies (beans, carrots, cabbage and green onions) and salt.

    4. Saute the veggies and mix them well and cook for couple of minutes.

    5. Now add garam masala, sweet chili sauce, soy sauce and mix well.

    6. Add water and vegetable broth. Let it simmer for 5 minutes.

    7. Then add chopped cilantro and mix it well. Simmer again for 4-5 minutes.

    8. Finally add the cooked noodles and cumin powder. Mix them well and let it simmer for 2 to 3 minutes.

    9. Adjust salt and spice accordingly. Switch off the flame.

    Yummilicious Tibetan Thukpa is ready. Serve hot with green onion garnishing.
