Yummy Poha

Prepare this fuss free iron rich poha with boiled potatoes, onion, mustard seeds, roasted peanuts, curry leaves and garnish with coriander leaves and grated coconuts for your breakfast. This vegetarian recipe is light and a healthy breakfast option.

    Ingredients to make Yummy Poha:

    1 cup poha or flattened rice, 1 chopped potato, 1 chopped onion, 1 tsp mustard seeds, 2 tbsp peanuts, 3-4 curry leaves , grated coconut, sugar, oil

    Steps to make Yummy Poha:

    1. Wash poha in colander, not letting it soak too long in the water. Leave in the colander to drain out completely. Sprinkle turmeric powder and salt over it. Mix well and keep it aside.

    2. Now, take a non-stick pan and dry roast the peanuts. Once done, keep them aside.

    3. Place a kadhai over medium flame, add 1 tbsp oil and heat it. Add the chopped potato slices to it and fry till they turn golden brown. Once done, take out from kadhai and keep them aside.

    4. In the same oil in kadhai, pour mustard seeds and let them splutter. Add chopped onion and saute it a for a minute.

    5. Add curry leaves and 1 tbsp sugar and roasted peanuts and saute it for another minute. Now add fried potatoes to it along with poha.

    6. Mix really well and allow it cook covered on low flame for 2-3 minutes. Turn off the flame.

    Garnish the poha with grated coconut and coriander leaves and serve it warm!
