Replace the rice of traditional khichdi with barley to add a lot of health benefits to it. Barley is rich in fibre, vitamin A, folate and even protein and keeps you satiated for a good time. Add some tomato, carrot and methi to add extra nutrients and spice up the taste.

½ cup barely, ½ cup yellow moong dal, 1 tomato blanched, 1 carrot peeled, methi seeds, ghee, turmeric powder, salt as per taste
1. Wash and soak dal and barley grains for few minutes.
2. Heat the ghee in pressure cooker and add the methi seeds.
3. When the seeds crackle add turmeric powder, chopped tomato and carrots. Saute them for a while. Add salt as needed.
4. Add the barley, yellow moong dal and 4 cups of water, mix well, and pressure cook for 2 whistles.
5. Allow the steam to escape before opening the pressure cooker's lid.
Serve warm with curd.
