Using potato and rice, you can prepare Mashed Potato Rice, which is an excellent source of carbohydrates. Flavoured with onion which has dietary fiber, calcium, and iron, along with a strand of mace, which has vitamins A and C, carotene, calcium and iron, this amazing rice preparation makes an ideal lunch/dinner.

½ cup rice, ½ potato, ¼ cup onion, 1 tsp oil, salt (less than 1 gram of salt a day), 1-2 mace strands, 1 cup water
1. Wash the rice well. In a pressure pan, add oil.
2. Once the oil is warm, add the mace strands.
3. Once it emits an aroma, add potato cubes and saute for 2 minutes.
4. Add the rice and saute well.
5. Add 1 cup water, salt and give a good mix.
6. Pressure cook for 2 whistles. Once the steam gets cooled, yummy Mashed potato rice is ready.
