Rice Coconut Porridge

Rice is a good source of carbohydrates. Cooking the rice in coconut milk which has fats and flavouring this dense rice coconut porridge with apple which has vitamin C and fibre, tastes awesome. This is one of the healthiest breakfast porridges.

    Ingredients to make Rice Coconut Porridge:

    1 cup coconut milk, ¼ cup rice, 1 pinch salt, 2-3 cashews, ¼ apple, 1 tsp grated coconut

    Steps to make Rice Coconut Porridge:

    1. Wash the rice and keep aside.

    2. In a vessel, pour coconut milk and warm the milk on medium flame.

    3. Once the milk starts to boil, add the washed rice. Quickly reduce the heat to low. It will take 10-15 minutes till the rice gets soft and cooked. Keep stirring in between. Ensure the milk does not get very hot otherwise the fat will separate and affect the texture of the porridge.

    4. Add salt and grated apple and cook till rice and apple gets incorporated in the milk very well.

    5. In a pan, saute the cashews and grind to a powder.

    Amazing and delicious rice coconut porridge is ready for breakfast. Garnish with powdered cashews and grated coconut.
