Is your child getting bored of the same old breakfast dishes every day? Time to introduce this incredible breakfast which not only looks appealing but is extremely delicious! This is also an excellent snack in the evening with a beverage! Eggs are brilliant sources of protein and essential fats. Eggs also contain vitamins A, C, B12, B6 and a lot of minerals. Cheese is a good source of essential fats and carbohydrates. This dish will keep your child power up the whole day!

Ingredients: 4 fresh eggs, salt, pepper, a quarter cup of chopped parsley, 1/2 a cup of parmesan cheese, a 1/4 cup of grated mozzarella cheese and cheddar cheese, 1 tbsp lemon juice
Steps:
1. Take all the eggs and break them open, separate the egg yolk from the egg whites. Keep them aside in separate containers.
2. Now, take the container which has all the egg whites. Using a hand blender or a whisk (a wooden spoon works just as well, with some elbow grease), beat the egg whites to gently aerate them. This helps to stiffen out the egg whites.
3. While whisking the egg whites, add a seasoning of some salt. Continue whisking. Add a little lemon juice along. Continue with the whisking until you are left with a very light and fluffy, airy mixture.
4. Now, add the finely chopped fresh parsley leaves and 1/2 a cup of grated parmesan cheese. Using a spatula, fold all the ingredients together to mix them well.
5. Take a big sheet of parchment paper and place it on a baking tray. Scoop out a good amount of the egg white mixture and place it on the parchment paper to make it seem like a nice big ‘cloud’.
6. Using a spoon, gently make a small dent in the centre of each cloud, making sure that it does not ruin the actual form of the egg whites.
7. Bake the cloud at 200 degrees for about 3 minutes. They will appear slightly brown.
8. Pop the yolks that were kept separated previously, in the dents of the clouds. At this point, add a little pinch of salt and pepper. Put the baking tray back in the oven and bake for 3 more minutes at 200 degrees.
9. Take the baking tray out and let it sit for a while. Grate some mozzarella cheese and cheddar cheese. Mix them both and add them on top of the cloud eggs. Put the tray back in the oven and bake for a minute. This will melt all the cheese.
10. Add some parsley and oregano for seasoning after all the baking is done.
Serve it with mustard sauce and let your child relish this new dish.
