Aam ki Launji is a sweet and spicy chutney. You will enjoy the spicy sweetish taste of this dish, which will linger in your tongue all day long. Mangoes are high in vitamins, potassium, and folate.

1 cup raw mango (washed, peeled, and cut into cubes), 1 tbsp. oil, ¼ tsp. fennel seeds, ¼ nigella seeds(kalonji), ¼ tsp. coriander powder, ¼ tsp. chili powder, ¼ turmeric powder, 3 tbsp. sugar, salt to taste
1. Heat oil in a heavy based pan over low flame. Add cumin seeds, mustard seeds, fenugreek seeds, fennel seeds and nigella seeds and allow them to splutter.
2. Add mango cubes, stir and cover the lid to cook for 2-3 minutes. Add turmeric powder, red chilli powder, coriander powder and salt.
3. Mix well, sauté for 1-2 minutes, add sugar and 3 tbsp. water, cover to cook until sugar dissolves, mango cubes turn tender and mixture becomes thick in consistency, while stirring occasionally.
4. Check whether the mango cubes are cooked otherwise add 1-2 tbsp. water, sauté and cook until the cubes are soft.
5. Remove from heat and Aam ki Launji is ready. Store it in an airtight container and refrigerate it.
Serve it with rotis, as curry, side dish, or just like that.
