This is a healthy and simple recipe that will melt in your mouth and goes well with rice or chapati. It is a delicious recipe that your kids will definitely love to eat and you can keep it less spicy to enhance its original flavor.

    Ingredients to make Aloo Baigan Bhujia:

    1 cup sliced potatoes, 1 cup sliced eggplant or baigan, 1 tbsp salt, 1 tbsp turmeric powder, 1 tbsp mustard oil

    Steps to make Aloo Baigan Bhujia:

    1. Take sliced potatoes and baigan separately.

    2. Heat little mustard oil in a pan and fry potatoes in it. When potatoes are fried then add slices eggplant to the same oil.

    3. Now add salt and turmeric to this and let them cook completely till they turn soft in texture.

    You can add red chilli powder of you wish to make it little spicy or else just granish it with coriander leaves.
