    Ingredients to make Aloo Fried Rice:

    2 potatoes cut into small cubes, 1 cup cooked rice, 1tbsp. chopped garlic, 1 medium onion thinly sliced, 1 tsp. black pepper powder, salt to taste, ¼ tsp. red chilli powder, oil as needed, ¼ tsp. turmeric powder, 1 tbsp. chopped coriander leaves.

    Steps to make Aloo Fried Rice:

    1. Rice should be fully cooked but grainy and not mushy.

    2. Wash, peel, and cut potatoes to tiny cubes and keep in a bowl of water.

    3. Pour oil to a hot pan, add onions, garlic and fry for a minute or two.

    4. Next add cubed potatoes, roast till they are fully cooked.

    5. Sprinkle turmeric, pepper powder, red chilli powder, and salt and fry well.

    6. You can sprinkle some water, if the potatoes are not cooked well.

    7. Ensure that all the water is evaporated before adding rice.

    8. Add cooked rice to the pan and mix well. Fry for 2-3 minutes and garnish with chopped coriander leaves.
