Aloo Kathal

Kathal is a tasty and nutritious vegetable and it is rich in fiber and vitamin B6. This thick curry goes well with hot chapati, parantha and chawal as well.

    Ingredients to make Aloo Kathal:

    500 gm kathal, 2-3 boiled potatoes, 2 finely chopped onion, 1 copped tomato, mustard oil for cooking, salt as per taste, 1 tsp cumin seeds, 1 bay leaf, 1 green chilli, ½ tsp ginger garlic paste, chopped coriander, ½ tsp cumin powder, 1 tsp turmeric powder, ½ tsp garam masala powder

    Steps to make Aloo Kathal:

    1. Take kathal and peel it off nicely and then cut it in long strips from the center. Remove the seeds from it.

    2. Now wash the pieces in clean water with your hands and rub it nicely.

    3. Peel the boiled potatoes and cut the pieces into equal size.

    4. In a blender take few chopped onion pieces, green chilli, ginger garlic paste and blend them all. Add water if required.

    5. Heat kadai and add oil into it. Once the oil is hot then add boiled potato pieces to it.

    6. Take them off in a plate when they turn golden brown.

    7. Now add kathal pieces to the same oil and fry them as well till they turn golden brown.

    8. Add more oil if needed to the same pan and add cumin seeds and 1 bay leaf.

    9. Now add chopped onion and ½ tsp turmeric and salt to it.

    10. Let the onions cook properly and then add ginger, garlic and onion paste to this.

    11. Let them cook well till the oil separates from the mixture.

    12. Add garam masala and pieces of aloo and kathal to the kadai.

    13. Add some water as per the requirement and mix well.

    14. Now add this sabzi to the pressure cooker and then close the lid.

    15. Give 2-3 whistles till it is cooked completely.

    Serve it hot with roti or parantha and garnish with coriander leaves.
