This one is a yummy steamed cake that is made with a blend of semolina, oats, and greens. Its nutrition quotient is thus, very high and a pleasant change from the same old traditional sooji dhokla, which is commonly made in all households. With the inclusion of sauteed Amaranth as well as oats, this yummy food becomes quite an ideal snack for your little one's lunch box. It is rich in proteins and vitamins.

2 cups sooji, 40 grams Peppy tomato oats, 200 grams green Amaranth leaves (finely chopped), 1 cup curd, ½ tsp hing, 1 grated ginger, 1 teaspoon cooking oil, red chili powder for garnishing, salt to taste, mustard seeds, 1 teaspoon til seeds, curry leaves
1. Take a pan and dry roast the semolina until you get a slightly roasted flavour. Do this on medium heat for a duration of 3-4 minutes and make sure not to turn the semolina (sooji) fully brown. Once it is roasted, transfer it to a big mixing bowl.
2. Now cook the Amaranth leaves, by chopping them first in the same pan. Then sprinkle some salt and stir-fry them till they become soft. While you do this, ensure that all excess water gets evaporated when you are cooking the leaves. Once that's done, allow the leaves to cool down and then keep them aside.
3. Now it's time to make the sooji oats dhokla batter. Take the big mixing bowl where you've kept the roasted semolina, and add the oats, with some salt, hing, the cooked Amaranth leaves, ginger, a teaspoon of oil and yogurt. Add water, little at a time, to make a thick batter. Adjust the salt as per your taste.
4. Let the sooji oats dhokla batter rest for about 5 minutes.
5. Now steam the Amaranth Sooji & Oats Dhokla. Preheat a steamer with water on medium-high heat.
6. Grease dhokla plates with oil and pour the Amaranth Sooji & Oats Dhokla batter evenly into the plates. Fill it only up to 3/4th level of the plates. Sprinkle just a little red chilli powder over the dhokla batter to add to the taste of the dhokla
7. Place the filled dhokla plates in the steamer and steamer on high for 10 minutes. After 10 minutes turn off the heat and remove the dhokla from the steamer and set aside for 5 minutes before you can cut them into shapes.
8. Finally, season the Amaranth Sooji & Oats Dhokla. Heat a teaspoon of oil in a tadka pan; add the mustard and cumin seeds and allow it to crackle. Add the curry leaves and give it a stir. Turn off the heat.
Time to drizzle the seasoning over the Amaranth Sooji & Oats Dhokla and serve it along with green chutney to your little one for breakfast or dinner! Enjoy!
