When we talk about Appam, we basically talk about soft lacy hoppers made with rice and other ingredients. Rice being its major one. In this recipe we will not use any form of yeast making it more nutrious.

1 cup - rice, 1.25 cup - paraboiled rice, 3 tbsp - Urad Daal, 1/4th tsp - methi seeds, 1 cup - coconut milk
1. Take rice, urad daal(remove the husks), and methi seeds, wash them properly 3 to 4 times in clean water and then soak them together in the same bowl for atleast 5-6 hours.
2. Now strain the excess and put the dal in a grinder and grind them by adding coconut milk ot check the consistency.Ensure that the consistency is little grainy and not too runny. Add some salt
3. Now leave the batter for fermentation overnight atleast for 10-12 hours, you will notice that the volume will also increase slightly. This batter will not be as thick as dosa batter.
4. Now take an appam pan with a handle and drizzle some oil once it's a little warm. Then pour a laddle full of batter and as you hold the kadhai handles, smear the batter around trying to keep the corners thin.
You can cover the pan with a lid and allow it to cook for sometime and serve once the base is slightly golden in colour.
