Apple and Mint Jelly

One of the super amazing ways of including apples in your child’s diet is through Apple and Mint jelly. Apples are loaded with Vitamin C and dietary fiber.

Ingredients to make Apple and Mint Jelly:

2 cups apple cubes, 1 cup water, 12-15 mint leaves, 3 tbsp. cider vinegar, 1½ cups sugar

Steps to make Apple and Mint Jelly:

1. Cut apples into small cubes and preserve the seeds.

2. Combine apples, seeds, water, lemon juice and mint leaves in a large saucepan, bring to boil.

3. Reduce heat and simmer until apples are very soft and pulpy stirring frequently. Add the cider vinegar and boil for 5 minutes.

4. Strain the mixture using a colander into a large bowl. Allow the liquid to drip through slowly, do not squeeze or press the pulp as this will make the jelly non-transparent.

5. In a large saucepan measure the apple liquid and pour into it. Add ¾ cup sugar to each cup of apple liquid

6. Keep stirring in low flame until the sugar has dissolved. Then bring to boil for about 30 minutes or until jelly sets when tested on a cold saucer.

7. Remove from heat; remove any foam with a ladle. stir in few extra mint and let it stand for 10 minutes. Pour into sterilized jars and seal them when cooled.
