Black Eyed Beans represent good luck and are cooked on New Year day incorporated in this dish called Beans Rice Stir Fry! The black eyed beans in this dish are rich in magnesium, calcium and iron.

Ingredients to make Beans Rice Stir Fry:
1 cup cooked Basmati Rice, ¼ cup well-cooked black eyed beans, spring onion, ½ tsp finely chopped ginger garlic, 2 tsp. stir fry oil, salt and pepper to taste, 2 tbsp of coriander leaves and 1tbsp of mint leaves.
¼ tsp. soya sauce, ¼ tsp. brown sugar, ¼ tsp. white vinegar/ lemon juice.
1. Heat oil in a pan. Add chopped ginger garlic. Fry it for a minute, or till the raw smell vanishes.
2. Add the cooked black eyed beans and sauté under low flame.
3. Add the fried rice sauce and mix everything well.
4. Finally, add the cooked rice, salt and pepper and cook for 7 minutes under low flame.
5. Switch off the flame and add spring onion and rest it for some time.
