Beetroot Curd Rice

This is an easy recipe for your little one and is very healthy too with beetroot as the main ingredient. This curd rice is sweet in taste and contains vitamin C and iron.

    Ingredients to make Beetroot Curd Rice:

    1/4 cup rice, ½ cup thick curd, 2 tbs grated beetroot, 3/4 cup water, salt as per taste

    To temper:

    ½ tsp oil, 1/3 tsp mustard seeds, ½ tsp urad dal, ½ tsp cumin seeds, a pinch of hing

    Steps to make Beetroot Curd Rice:

    1. Wash the rice in running water and then add 3/4 cup water to it. Pressure cook this rice for 3 whistles in cooker.

    2. Once the pressure releases, open the lid and mash the rice with ladle.

    3. Grate the beetroot and keep it aside.

    4. Take some oil in a pan and add mustard seeds, urad dal, hing and cumin seeds to it.

    5. When the dal turns brown then add grated beetroot and 2 tbsp of water.

    6. Cook it nicely till beetroot turns soft and then take it off from the flame.

    7. Add curd to the cool rice and mix well.

    8. Add the tempering and beetroot mixture to the rice and mix well.

    Serve chilled.
