Bharwaan Karela is a Punjabi cuisine, which will make you fall in love with karela. Karela contains phytonutrients and are a natural deworm.

3 medium sized karela, ½ cup raw onion paste, 1 tsp. garlic paste, ¼ tsp. garam masala powder, 1 tsp. amchoor, ¼ tsp. haldi, 1 tsp. mustard oil, ½ tsp. mustard seed, salt to taste + salt for applying on the karela, oil for deep frying.
1. Peel the outer skin of bitter gourd and slit each karela lengthwise and scoop out the inside seeds and fiber.
2. Apply salt to the outside and inside of the karela and keep aside for 15 minutes.
3. Wash the karela and pat it dry using a kitchen napkin and keep them in a plate
4. Heat mustard oil in a pan and add mustard seeds and let it splutter. Add the onion paste and sauté on a medium flame till the raw smell goes away. Add all the other masala ingredients and mix well and cook on a medium flame for 2 minutes.
5. Divide the mixture into 3 equal parts. Fill the prepared mixture part into each slit karela and tie them with a thread all over.
6. Heat oil in a frying pan and when it is hot gently slid the tied karelas into the oil and reduce the flame to medium and fry till they are golden brown from all the sides. Remove and drain them on kitchen tissue to absorb excess oil.
7. When it is a bit cool, remove the thread and cut the karela into equal pieces.
Serve the Bharwaan Karela with favourite chutney or sauce.
