Blackberries are rich in vitamin C, K, and A, and a good source of fibre too. Along with basil, you can prepare a delicious fruit preserve, blackberry basil jam. Flavour the jam with lemon juice, vanilla extract, and roasted garlic. These ingredients enhances the flavour and taste of the jam.

9 cups crushed berries, 6 cups sugar, 1 lemon zest, ½ cup basil, 2 tbsp lemon juice, 1 tbsp vanilla extract, 1 roasted garlic, 5-10 dried basil
1. In a small pan, dry roast the garlic. Squeeze and keep aside.
2. In a food processor, add the lemon zest, sugar, dried basil leaves and basil leaves till you get a uniform mixture.
3. In a large vessel, add the sugar mixture, berries, vanilla extract and lemon juice. Gently bring to a boil till all the sugar gets dissolved.
4. Cook till the mixture thickens.
5. Add the squeezed garlic too. Give a good mix.
6. Bring the jam to room temperature and pour into moulds. Refrigerate for an hour.
Delicious Blackberry Basil jam is ready to be enjoyed with bread or parathas. Devour!
