Blackberry Jelly

Homemade preserves are a real treat to your child and family. Try this recipe for the breakfast jelly cravings. Blackberries are loaded with vitamin E, folate, magnesium, and dietary fiber.

    Ingredients to make Blackberry Jelly:

    2 cups blackberry juice, 2 cups sugar, 2 tsp. dry pectin, ½ tsp. butter(optional)

    To make the juice:

    1. Crush the berries lightly and mix water and cook them over medium heat for about 20 minutes or until the berries are soft

    2. Line a colander with cheesecloth and place over a bowl.

    3. Pour the prepared fruit into the colander without pressing on fruit. Let all the juice drain into the bowl.

    Steps to make Blackberry Jelly:

    1. Measure 2 cups of berry juice and mix sugar and heat stirring constantly until the sugar dissolves.

    2. Add pectin and butter now to reduce foaming and bring to a full boil over high heat until the mixture doesn’t stop bubbling when stirred.

    3. Boil and stir for 1 minute and remove from heat. Skim off any foam on the top.

    4. Quickly ladle into jelly molds or prepared sterilized jars.

    5. Let it cool down and place in the fridge to set.

    Try for breakfast!
