Masoor dal is rich in protein and dietary fibre. Along with rice, which is a good source of carbohydrates and bottle gourd, which has vitamin C and minerals like iron and magnesium, you can prepare a tasty and wholesome one pot meal- Bottle Gourd Khichdi. Bottle gourd is high in dietary fibre too.Flavour this khichdi with ghee, cumin and ginger garlic paste and it turns out awesome.

Ingredients to make Bottle Gourd Khichdi:
½ cup rice, ¼ cup masoor dal, 1 small bottle gourd, 1 tsp ginger garlic paste, 1 tsp cumin seeds, ½ tsp cumin powder, 1 tsp ghee, salt as required, 2 cups of water
Steps to make Bottle Gourd Khichdi:
1. Wash and soak the rice and dal together for 15 minutes. Drain the water and keep aside.
2. Chop the bottle gourd into cubes.
3. In a pressure pan, add ½ tsp ghee.
4. Once the ghee is warm, add cumin seeds. As the cumin seeds emit an aroma, add the ginger garlic paste and stir for 1-2 minutes. Add the diced bottle gourd and mix.
5. Add the washed rice and dal. Add salt and give a good mix.
6. Add 1.5 cups of water and stir well.
7. Pressure cook for 3 whistles.
Nutritious Bottle Gourd Khichdi is ready to be relished. Serve warm with ½ tsp ghee on top. Devour and enjoy!
