Brinjal Curry with Curd

Brinjal curry with curd is a popular curry from the Bengali and Odia cuisine. It is a delicious blend of brinjal with curd, besan and few spices. Brinjal is known as a vegetable having a unique range of health benefits, including an ability to help build strong bones and prevent osteoporosis, reduce the symptoms of anemia, and increase cognition. Whereas curd is a great probiotic (an ingredient that contains live bacteria). These good and beneficial bacteria are known to improve gut activity, soothe inflamed digestive systems and treat an upset stomach. It is a very easy to made dish and is usually served with chapati or rice.

    Ingredients to make Brinjal Curry with Curd:

    Brinjal-2 medium , besan-2 tsb, water- ½ cup, coriander powder-½ tsb, turmeric powder-½ tbsp, salt-to taste, oil-1/4 cup, curd-1 cup, and mustard seeds-½ cup

    Steps to make Brinjal Curry with Curd:

    1. In a large kadai heat 3 tsp oil and roast sliced baingan and keep aside.

    2. Now in the same kadai, heat 2 tsp oil and add mustard seeds. Sauté well.

    3. Add 2 tsp besan and roast on low flame for 5 minutes.

    4. Add turmeric and coriander powder. Now add ½ cup water and 1 cup whisked curd keeping the flame on low. Stir continuously till the curd combines well.

    5. Add roasted brinjal and salt. Mix well, cover, and simmer for 5 minutes.

    Serve hot with chapathi or kulcha.
