Cabbage Foogath

This is a simple stir fry delicious side dish, which has a wonderful aroma of curry leaves and amazing taste of fresh grated coconut. Cabbage is an excellent source of vitamins C and B6, potassium, folic acid, biotin, calcium, magnesium, and manganese.

    Ingredients to make Cabbage Foogath:

    ½ tbsp oil (preferably coconut oil), 1 tsp mustard seeds, 1 tsp urad dal, 4 to 5 curry leaves, 2 green chiles (slit), 3/4 cup chopped cabbage, ½ cup green peas, 1 tsp grated ginger (adrak) and salt to taste, ½ cup freshly grated coconut

    Steps to make Cabbage Foogath:

    1. Take a wok and heat oil in it. Add the mustard seeds. Let it splutter,

    2. Add the urad dal, curry leaves, and green chiles. Fry it for 20 seconds on a medium flame by stirring continuously.

    3. Add the cabbage, green peas, ginger, and salt. Mix it well and cook on a medium flame for 8-10 minutes. Stir it in between.

    4. Add the coconut. Mix again and let it cook on a low flame for 4-5 minutes. Stir it continuously.

    Serve hot with rice/phulkas.
