    Ingredients to make Carrot and Cashew Payasam:

    3 cups milk, 2 tbsp ghee, 3/4 cup grated carrot, ½ cup soaked cashews in milk, 1/4 cup sugar, 1 tsp cardamom powder

    Steps to make Carrot and Cashew Payasam:

    1. Take a heavy bottom vessel and boil the milk till it is reduced to 3/4 from its original quantity.

    2. Heat ghee in a pan and add carrots in them and saute for 10-15 minutes on medium flame.

    3. Drain the cashews and keep the milk aside.

    4. Now blend carrot mixture and cashews to form a coarse paste.

    5. Add this paste to the boiled milk and on low flame simmer it for 15 minutes. Keep stirring.

    6. Now add cardamom powder and mix well. Cool it completely and then keep it in the fridge.

    Serve chilled.
