Try out this easy peasy healthy carrot chutney, which tastes very delicious. Carrot will make this chutney a healthy one as it is a rich source of vitamin A, biotin, vitamin K, and potassium.

4 tsp oil, 1 tsp urad dal, 1 tsp chana dal, 4 dried red chili, 2 clove garlic, 2 tbsp. onion finely chopped, 1 cup carrot peeled and chopped, 3 tbsp. coconut grated, small lemon sized tamarind, and ½ tsp salt, 1 tsp mustard, and a few curry leaves
1. Roast urad dal, chana dal, and dried red chili on a heated pan with 1 tsp oil.
2. Saute garlic and onion until the raw smell disappears and then add 1 cup chopped carrot. Saute until the color changes.
3. Allow the mixture to cool completely.
4. Combine the cooled mixture along with add coconut, tamarind, and salt. Add a little water and blend to a smooth paste.
5. Heat 2 tsp oil and add mustard and few curry leaves. Let them crackle and then pour the tadka over carrot chutney.
Serve it with dosa, idli, or vada.
