Prepare these flavourful and colourful Carrot Cookies at home. These are healthy as they are made with oats and carrots rich in fiber and vitamin A, and can be served in breakfast or snack with milk.

3/4 cup butter, 3/4 cup sugar, 1 egg, 1 tsp vanilla extracts, 1 cup all purpose flour, 1 tsp cinnamon powder, ½ tsp salt, 1 tsp baking soda, 1 cup oats powder, 1 cup shredded carrots, chopped walnuts
1. In a bowl beat butter and sugar together until smooth and foamy; add egg and vannila extract, beat until incorporated.
2. Whisk all-purpose flour, baking powder, oats powder, cinnamon and baking soda together in a bowl; stir into butter mixture until just incorporated.
3. Add carrots, walnuts and fold into dough.
4. Drop by rounded teaspoon on greased baking sheet and bake in preheated oven at 200 degrees C for 10-12 minutes.
5. See the cookies will have slightly brown edges after cooking.
Serve them with warm milk.
