Chainsoo is a traditional pahari dal made from black gram seeds with a strong tempering of garlic and coriander. It is rich in protein.

Ingredients to make Chainsoo:
1 cup black gram seeds, ½ cup mustard oil, 4-5 garlic cloves, 1 tsp cumin seeds, 4 whole black pepper, 2-3 red chiles, a pinch of asafoetida, 1 tbsp coriander powder, 1 tsp turmeric powder, water as required, salt as per taste, ½ tsp garam masala.
Steps to make Chainsoo:
1. Dry roast dal in a kadai(preferably iron) for 2-3 minutes. Now grind it into a coarse powder.
2. Heat oil in kadai; add garlic cloves. When cloves turn golden brown add cumin seeds, pepper, chilli, asafoetida.
3. Now add dal powder and fry for 1-2 minutes. Add turmeric powder, coriander powder, salt and water. Bring it to boil.
4. Cover with lid and simmer for 20-25 minutes or until daal becomes very soft. Once done, sprinkle garam masala over it; mix and remove from heat.
Garnish with coriander and serve hot with rice and chapati.
