    Ingredients to make Chatpata Karela:

    10 karela (cut into halves vertically), ½ cup finely chopped onions, ¼ tsp. methi seeds, ½ tsp. saunf , 1 ½ tbsp. oil, salt to taste, 1 tsp. amchoor, sugar as desired, ¼ tsp. turmeric powder, ½ tsp. chili powder

    Steps to make Chatpata Karela:

    1. Scoop the bitter gourd halves using a spoon and slice them thinly, transferthem to bowl.

    2. Sprinkle little salt and toss well and keep aside for half an hour.

    3. Later squeeze out all the excess water. place the squeezed karela on a thick frying pan and cook on a medium flame for 8-10 minutes while tossing occasionally.

    4. Heat the oil to the frying pan and add methi seeds and saunf, when they start to splutter add the onions and sauté on a medium flame for 2 minutes.

    5. Add turmeric, chilli powder, sugar, amchoor powder and salt and give a good stir to all the ingredients. Sauté for 3 minutes.

    6. Add the karela slices, mix well and cook on a medium flame for 3 minutes or until the karela is soft and crispy while stirring occasionally.

    Serve to enjoy the taste of sweetness, spiciness, and sourness.
