Chuin Alu Baigan Badi Tarkari is a very healthy dish for your kid loaaded with the goodness of potatoes, bananas, brinjal, and badis.

    Ingredients to make Chuin Alu Baigan Badi Tarkari:

    1 large alu, 2 long chuin, 2 medium green bananas, 3 baigan, 8 to 10 big badis, 1 tsp mustard seeds, 1 tsp cumin, 1 tsp phutana, 1 tsp dry red chili, 1 small tomato, 1 tsp turmeric, 2 cloves garlic, small onion diced

    Steps to make Chuin Alu Baigan Badi Tarkari:

    1. Grind mustard seed, cumin seed, dry red chili to form a paste.

    2. Wash all vegetables and cut them length wise into big pieces. Take 4 scoop of the ground paste in a bowl and pour 2 cups of water and mix well. Let it settle.

    3. Heat a kadai and slowly pour the masala water into the kadai so that the settled masala remains in the bowl.

    4. When the water starts to boil, add turmeric, salt, and the diced tomatoes. Cook for 2 minutes and then put the vegetables.

    5. Cook vegetables till they soften. In a separate pan, heat oil and fry the badi. Set aside.

    6. Then put phutana, dry red chilli and saute. When they start to splutter, add onion and crushed garlic and cook some more.

    7. When onions are browned, pour it on the boiled vegetables with the gravy.

    Cook for five more minutes and then add the badi. Serve hot.
