Coconut Pathiri is a traditional Keralite cusine made with coconut and rice flour chapati. It is a special and healthy breakfast option rich in calcium.

    Ingredients to make Coconut Pathiri:

    1 cup rice flour, ½ cup grated coconut, 1.5 cup water, salt to taste, 1 cup coconut milk

    Steps to make Coconut Pathiri:

    1. Boil water in a deep pan. When boiled, add rice flour to it. Switch off the flame, cover with lid and keep aside.

    2. When cool down a little bit, open the lid and knead the flour into a smooth dough. Add coconut in it and knead then.

    3. Make balls out of dough; flatten them by hands to make little thick pathiris.

    4. Heat the tawa and cook pathiris on both sides.

    Pour some coconut milk over the pathiris and serve hot.
