Coconut is rich in fibre, vitamins C, E, B1, B3, B5, and B6, and minerals including iron, selenium, sodium, calcium, magnesium, and phosphorous. So, why not try something with coconut when it is loaded with such nutrients? Chutney is the best way to include coconut in your kiddo’s diet with a lot of variety of meals.

1 cup fresh grated coconut, 1-2 green chiles, ½ inch chopped ginger, 10-12 curry leaves,4-5 tbsp water, salt to taste,1 tbsp oil, ½ tsp mustard seeds, ½ tsp cumin seeds, 1 red dry chili, a pinch of asafoetida
1. Grind grated coconut, green chiles, ginger, and 4-5 curry leaves along with a little water in a mixer jar.
2. Heat a pan and add mustard seeds and cumin seeds. Let it crackle.
3. Add dry red chili, asafoetida, and 4-5 curry leaves.
4. Pour the tempering on the chutney.
5. Mix it well.
Serve this delicious chutney with dosa, idli, or vada.
