Corn and Paneer Bhaji

It is a good option to take a day off from sambhar when you are in mood to eat dosa with curry. It is a good combination of paneer and corn that is very moderate in taste and is free from typical coconut base dishes of South India.

    Ingredients to make Corn and Paneer Bhaji:

    1 cup boiled sweet corn kernels, 1 cup paneer cubes, 1 tbsp oil, ½ cup finely chopped onion, 2 tsp finely chopped green chiles, 1/4 tsp turmeric powder, ½ tsp sugar, 2 tbsp chopped coriander, salt to taste

    Steps to make Corn and Paneer Bhaji:

    1. Heat some oil in a pan and add chopped onions. Saute for 2-3 minutes on medium flame.

    2. Add green chiles, sweet corn kernels, paneer, coriander, turmeric powder, sugar, and salt.

    3. Add 2 tbsp of water and mix them well. Cook on medium heat for 2-3 minutes and stir continuously.

    Serve it hot with dosa.
