Crispy Aloo Pastry

This Crispy Aloo Pastry is a great alternative to sandwiches and perfect for adding more vegetables to your diet. Potatoes are a good source of vitamins C and B6, manganese, phosphorus, niacin and pantothenic acid

    Ingredients to make Crispy Aloo Pastry:

    1 cup Wheat Flour, 2 tbsp. rice flour, 1 cup boiled, peeled and mashed Potatoes, oil for frying, ½ tsp. powered carom seeds (ajwain), ½ tsp. mustard and cumin seeds, ½ tsp. turmeric and black pepper powder and salt to taste, 5 Curry Leaves, 2 tbsp. finely chopped Coriander Leaves, Water required for making soft dough

    Steps to make Crispy Aloo Pastry:

    1. In a mixing bowl, add wheat flour, rice flour, salt, powered carom seeds, oil mix the flour well and add water to make a stiff dough.

    2. Cover the dough and rest for about 30 minutes.

    3. Add little oil in a hot pan, add mustard seeds, when it splutter, add cumin seeds, curry Leaves, finely chopped Coriander Leaves and the mashed potatoes, salt and mix well. Remove from heat.

    4. Divide the dough into equal portions and with help of the rolling pin shape them into elongated puri shape and cut in the centre and keep them aside.

    5. Take one sheet, apply water on the edges of the sheet, bring the two ends closer and seal to make a pocket.

    6. Stuff a spoonful of aloo stuffing and seal the top nicely. Ensure that all the edges are secured well.

    7. Deep fry these pastries in medium hot oil until they are crispy and golden.

    8. Drain them on a kitchen paper towel.
