Dahi Baigan is a power-packed health booster with the goodness of yogurt and brinjal.

Ingredients to make Dahi Baigan:
For roasting baingan: 3tsp oil, 6 eggplants
For curry: 2 tsp oil, 1 tsp cumin, 1 bay leaf, pinch of hing, 1 onion chopped, 1 tsp ginger garlic paste, 2 tsp besan, 1/4 tsp turmeric, ½ tsp lal mirch powder, ½ tsp coriander powder, 1/4 tsp garam masala, ½ cup water, 1 cup dahi, ½ tsp salt, 1 tsp kasuri methi, 2 tsp coriander leaves
Steps to make Dahi Baigan:
1. Heat oil and roast the eggplants. Keep aside. Now, add oil again, cumin, bay leaf, hing, and saute.
2. Add all the other ingredients one by one. Add water and curd also. Stir well.
3. Add roasted eggplants and salt. Mix well, cover, and simmer for 5 minutes.
4. Add kasuri methi and coriander leaves. Mix well.
Serve this dish and see all enjoy.
