Dalma

A traditional recipe of Orissa, this dish called Dalma is a combination of arhar dal and vegetables and tastes best when served with roti and rice. Dalma is rich in protein and vitamins.

    Ingredients to make Dalma:

    Toor dal 1/4 cup, 1 tbsp paanch phoren (mustard, nigella, fennel, cumin, fenugreek seed), shredded coconut, 2-3 tbsp ghee, ½ tsp sugar, 2 dried red chili, salt to taste, ½ tsp turmeric powder, 1 tbsp dalma masala, 1.5 cup of chopped vegetables (Drumstick, red/white raddish, yam, raw banana, brinjal, pumpkin), coriander leaves, 1 onion, 1 tbsp ginger chopped

    Steps to make Dalma:

    1. Wash and soak dal for about 15 minutes. Meanwhile chop all the vegetables.

    2. Pressure cook all the veggies and dal till one whistle. Add turmeric powder, little salt, dried chilli and water to it.

    3. In a pan heat ghee; add paanch phoren, julian onion, chopped ginger, chopped green chillies and dalma masala.

    4. Add turmeric powder, red chilli, salt, sugar and lime and mix well. Stir fry for a minute.

    5. Transfer the cooked dal and veggies to the pan. Mix well.

    6. Simmer it 15-20 minutes or until cooked.

    Once done, garnish it with chopped coriander leaves. Serve hot with chapati and rice.
