Doodh Paak is a delicious, relishing, semi-thick mithai, which can be served as a dessert. The cardamom and saffron add to the flavour and aroma. Milk is a rich source of protein and calories, which is important for growing kids and help grow strong bones, whereas rice is a good source of high energy. The useful protein in rice rejuvenates the body when mixed with milk and is a cure for diarrhea and dysentery.

2 litre full fat milk, 2 tbsp basmati rice, 1 tbsp ghee, 200 grams sugar, 1/4 tsp cardamom powder, 1 pinch nutmeg powder, and 3 tbsp almonds, and pistachio nuts
1. Wash and soak the rice for 10 minutes.
2. Finely chop the almonds, pistachios.
3. Mix ghee into soaked rice. Keep aside.
4. Heat milk and bring it to boil. Keep stirring for about 30-40 mins till it reduces to half.
5. Add rice and cook till milk is creamier.
6. Add sugar as per taste. Stir the mixture till sugar dissolves.
7. Sprinkle cardamom and nutmeg powder. Garnish with almonds and pistachio.
Serve Doodh Paak hot or chilled along with puri.
