Egg In A Mug

This really cool spin-off on omelettes is sure to save you some time every morning and will definitely be loved by your child because of its presentation. This is a versatile recipe and can be prepared with any veggies you have at home. Eggs being a rich source of protein and essential fats, this dish is sure to fire up your kid’s mornings!

Ingredients: 2 whole eggs, 1/2 an onion, 1/2 a tomato, some mushrooms, chopped bell peppers, chilli flakes, oregano, salt to taste, mozzarella cheese.

Steps:

1. In a wide mouthed bowl, break open two eggs and beat them until the yolks mix well with the whites.

2. Add salt, chilli flakes and oregano. Mix well.

3. Add finely chopped onion, tomato, mushroom and bell peppers. This is a great way to get your child eat a good load of veggies!

4. After giving that a good mix, transfer the contents of the bowl into a nice big microwavable coffee mug with a handle.

5. Top it off with a generous amount of grated mozzarella cheese.

6. Put the coffee mug in the microwave and set the timer to 5 minutes. Leave the mug to rest after the timer is out.

7. Take a toothpick and stick to the bottom of the mug. If the toothpick comes out wet, put the mug back in the microwave for another minute.

Your egg in a mug is ready! Serve with mustard sauce to your kid and let him enjoy his breakfast!

Note: Play with different combinations of veggies for this dish. For example, try a spinach and cheese combination with olives, jalapenos, tomato, etc.
