There is a perfect amalgamation of millets and lentils in this dish called Foxtail Millet Adai and it is highly nutritious, full of fiber, and protein. This is one of the healthiest breakfast.

    Ingredients to make Foxtail Millet Adai:

    1 cup foxtail millet, ½ cup tur dal, ½ cup chana dal, 2 tbsp urad dal, salt to taste, a pinch of hing, grated coconut, oil

    Steps to make Foxtail Millet Adai:

    1. Soak all the cereals together for 3-4 hours.

    2. Grind them together with salt and hing to make adai (dosa) batter.

    3. Heat tawa and pour a ladle full of adai batter and spread it in a circular motion as you do for dosa. Sprinkle grated coconut on top.

    4. Drizzle oil on top and around edges. Once cooked from the bottom, flip it to the other side and cook.

    Serve hot with coconut chutney.
